INGREDIENTS
2 cups whole wheat or oat bran pancake mix
1 1/2 cups water
1/2 cup pureed pumpkin (canned okay)
1/3 cup lite maple syrup
1/2 cup chopped walnuts
1/2 cup golden raisins
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
DIRECTIONS
* Mix all ingredients in a large bowl.
* Pour ¼ cup of batter into a warmed non-stick skillet or griddle sprayed with cooking spray.
* Cook over medium-heat until lightly browned on each side.
* Try serving with a dollop of vanilla yogurt.
