Barramundi with Fennel and Oranges

Ingredients:
2 whole barramundi, scaled, gutted, gills and fins removed
1 1/2 Tbsp olive oil
1 fennel bulb, thinly sliced (white part only)
Sections from 2 oranges
1 tsp balsamic vinegar (optional)
Herbs for garnish (fennel fronds, parsley, cilantro, or mint)
Salt and pepper

Tuna Steak with Apricot Compote

The oils found in fish such as tuna are rich in the ‘good fat’ omega-3 and are thought to help maintain a healthy heart. This recipe combines tuna with a savoury low GI compote made from apricots and tomatoes.
Ingredients
(Per person)
1 tuna steak (approx. 150g)
½ small red onion
8 dried apricots
1 medium tomato
1 tbsp brandy
1 tbsp balsamic vinegar
2 tbsp extra virgin olive oil
½ teaspoon dried thyme
freshly ground pepper
a few leaves of crisp lettuce

Baked Coconut Shrimp

Ingredients

* 1 1/2 lbs. extra large shrimp, defrosted, shelled and deveined, rinsed and patted dry
* 1/3 cup cornstarch
* 1/2 tsp. ground red pepper
* Dash of salt
* 1 Tbs. honey
* 1 Tbs. freshly squeezed lime juice
* 1/3 cup egg whites
* 3/4 cup coconut
